EGG TARTS

Ingredients for Pastry :
125 g butter at room temp
225 g flour1 tbsp custard powder
1 tbsp sugar
1 egg
1 tsp vanilla essence

Method for pastry :
1. Sift the flour and custard powder.
2. Rub the butter with the flour until they look like breadcrumbs
3. Add egg and knead till a dough is formed.
4. Add essence and mix well.
5. Take a portion of the dough and press the crust into a tart mould, leaving top about 1 mm high.

Ingredients for egg filling :
4 eggs
2 tsp custard powder
100 g sugar
150 ml milk
1 tbsp lemon juice
yellow food colouring, optional

Method for the egg filling :
1. Mix the eggs with custard powder. Filter the egg mixture.
2. Mix sugar with milk.
3. Combine the eggs with the sugar solution in a pot. Cook over low heat till warm. Do not bring to a boil. Add lemon juice and colouring if mixture seems pale looking. Set aside.

Method :
1. Preheat oven to 180°C.
2. Bake the tart crust for 10mins. (Make sure that the crust is completely baked and dry). Let pastry cool down before pouring in egg filling.
3. Pour egg mixture into crust and bake at 180°C for about 10 - 15mins. (Make sure egg filling is cooked but do not overbake as the filling will result in a crack.
